Kale and Edamame Quick Lunch Salad

This salad is great in a pinch, because I usually have all or most of the ingredients in my house at any given time.

It’s basic, easy, and super healthy!

Kale and Edamame Quick Lunch Salad | Health and Happy Hour
Ingredients:

Kale, as much as you want!
Cherry Tomatoes, 5-6, halved
Edamame, 1/3 cup

Optional: Dried Cranberries, 1/4 cup

Honey Mustard ACV Oil-Free Dressing:

Apple Cider Vinegar, 1/2 cup
Dijon Mustard, 1/4 cup
Honey, 1/4 cup

Note: If you haven’t hopped on the Apple Cider Vinegar crazy train yet, I suggest you do it now! It provides a plethora of health benefits, and it makes a GREAT Honey Mustard Oil-Free Dressing! Make sure you get the kind with the “mother” though to reap the full health benefits.  It can be found on Amazon here.

Instructions:

I recommend using a mason jar to mix the salad dressing. I buy them in bulk from Amazon here and use them for all kinds of food storage and other kitchen needs.  The best part is that they’re glass, so you never have to worry about dishwasher-safe, BPA-free nonsense, microwave-safe nonsense 🙂

Add the dressing ingredients to a mason jar, stir the honey up a bit, then close the lid and shake heavily.

Note: If you often take salads with you to lunch, these salad kits from Amazon are great when you want to keep toppings and dressings separate from the lettuce.  If you don’t bring salads to lunch often, it’s a great reason to start 🙂
