Pineapple Avocado Salsa Chicken
This recipe will give your tired old weeknight chicken recipe a new twist. It’s super easy to make, and it looks beautiful when finished 🙂
It’s that recipe that will wow people, and they’ll never know how simple it was to make!
Pineapple, 1 cup chopped
1/2 Avocado, chopped
Red Onion, 1/2 cup chopped
Juice from 1/2 Lemon and 1/2 Lime
Chicken Breast, 1 lb
Italian Seasoning, 1 tsp or (1/2 tsp each of Thyme, Oregano, Rosemary)
Optional Ingredients: Brown Rice or Quinoa
Cook the chicken in a skillet on the stove in coconut oil and Italian seasoning for 8-10 minutes or until done or the oven for 400 degrees for 15 minutes or until done.

While the chicken is cooking, chop up the rest of the ingredients for the salsa and combine in a bowl. Squeeze the lemon and lime juice over the mixture and stir well to coat.
Serve the salsa over the chicken with brown rice, quinoa, or vegetables, if desired.
