No-Cook Zucchini Noodles with Avocado Pesto
The best part about this recipe is that there is no cooking required! This dish is great at room temperature or even cold as leftovers! I like to eat it as a light lunch, but it’s also great for dinner too. I suggest adding some pine nuts to get a little extra protein 🙂
It’s also a great way to get more avocados in your life! Even though they’re high in fat, avocados are one of the best weight loss friendly foods out there. They’re high in healthy fats, fiber, and folic acid, which help you feel satiated after meals.
(makes 2-4 servings)
Fresh Basil (best) or dried Basil
Garlic, 2 Cloves
Olive Oil, 1/4 cup
Juice from ½ Lemon
Salt and Pepper to taste
You’ll need a spiralizer to make the zucchini noodles. Don’t be intimidated by these contraptions. They’re super easy to use and clean. I have this one from Amazon. It’s a bestseller, and it works awesome! I also use it frequently to make curly sweet potato fries!
To make the avocado pesto, combine all of the ingredients into a food processor or blender. Blend until smooth!
Spoon 2-3 tbsp of pesto over zucchini noodles and add the tomatoes.
If you’d like to add nuts for a little extra protein and crunch, I think pine nuts pair the best with this dish. Almonds, cashews, or walnuts would taste great as well. Just don’t go overboard, because the avocado pesto already contains a good amount of healthy fats 🙂
