Cajun Chicken Lettuce Wraps

This is a great recipe for all you gluten-free folks or if you’re trying to shed some pounds.  This is a great, filling, carb-free recipe!

You can also pre-make it and bring it to work, because it’s great hot and cold!

Cajun Chicken Lettuce Wraps

Ingredients:

Chicken breast, 1 lb, chopped or sliced
Carrots, 1/2 cup, shredded
Green Onions, 1/2 cup, chopped
Olive Oil or Coconut Oil
Cajun Seasoning
Bragg’s Liquid Aminos (or soy sauce)
Lettuce for wraps (Butter lettuce works best for wraps, but any kind will do)

Optional:
Sesame Seeds
Brown Rice

Instructions:

If you haven’t heard of Bragg’s Liquid Aminos, you should check it out here.  It’s by the same company that makes the crazy popular brand of Apple Cider Vinegar.  The liquid aminos tastes just like soy sauce, but it doesn’t actually have soy in it.  Soy, along with corn, is one of the most genetically modified foods on the planet and should be avoided when possible.  Liquid Aminos is a GREAT alternative!

Add the oil, chicken, 2 tbsp liquid aminos, and 1 tsp cajun seasoning to a sauce pan, and cook the chicken on medium heat for 5-10 minutes depending on the size of the chicken cutlets.

Transfer the chicken to the wraps and garnish with shredded carrots and green onions. Serve with rice if desired.
