Easy One-Pan Oven Fajitas
I think most people think of fajitas as an overly complicated and time-wasting recipe. I thought that to some extent before I stumbled across methods to cook them in the oven in ONE pan!
These are guaranteed to be the easiest fajitas you’ll ever make in your life!
1 lb Chicken Breast
2 Bell Peppers
1 Red Onion
Paprika, Chili Powder, Garlic Powder, 1 tsp each
Salsa (diced Tomatoes, Jalapeno, Cilantro, Onion, Lime juice) or store-bought
Juice from 1 lime
Optional: Jalapenos, Corn or Flour Tortillas, Guacamole, Sour Cream
Preheat the oven to 400 degrees.
Slice the chicken and veggies up fajita style (long, thin slices) and add all of the ingredients to a casserole dish or fajita pan. Mix the spices in a separate bowl and then add to the casserole dish or fajita pan.
Squeeze the lime juice over the mixture and stir again.
Bake in the oven for 15-20 minutes until the chicken is done.
Serve with salsa, guac, sour cream or tortillas if desired. If you’re trying to lose weight, I recommend skipping the tortillas and eating them a la carte!
Note: The fajita pan that I use is this one from Amazon. They’re a good investment if you make dishes like this or stir fries often. The pan can go in the oven or on the stove.
