Orange and Beet Sesame Salad

Beets seem to get a really bad rap, but the funny thing is that I don’t think most people who “dislike” beets have even tried them.  They actually taste pretty sweet and are great raw on salads and in smoothies as well as cooked in dinner recipes.

Orange & Beet Sesame Salad with Orange Apple Vinaigrette Dressing | Health and Happy Hour
Ingredients:

½ Orange, sliced
½ Beet, sliced
Sesame Seeds, 1 tbsp
Arugula

Orange Apple Vinaigrette Dressing:
Juice from 1/2 Orange
Apple Cider Vinegar, 2 tbsp
Dijon Mustard, 1 tbsp
Black Pepper, 1/4 tbsp

Instructions:

Note: If you haven’t hopped on the Apple Cider Vinegar crazy train yet, I suggest you do it now! It provides a plethora of health benefits, and it makes a great addition to oil-free dressings! Make sure you get the kind with the “mother” though to reap the full health benefits.  It can be found on Amazon here.

To make the dressing, squeeze the juice from the ½ orange into a mixing bowl. Add the rest of the ingredients and whisk together.

Slice the beets and the other half of the orange and add all of the ingredients to a large salad bowl.  Add chicken or walnuts if you want a denser salad.  I suggest walnuts with this one 🙂

Note: If you often take salads with you to lunch, these salad kits from Amazon are great when you want to keep toppings and dressings separate from the lettuce.  If you don’t bring salads to lunch often, it’s a great reason to start 🙂
