Pineapple Avocado Salsa Chicken

This recipe will give your tired old weeknight chicken recipe a new twist.  It’s super easy to make, and it looks beautiful when finished 🙂

It’s that recipe that will wow people, and they’ll never know how simple it was to make!

Pineapple Avocado Salsa Chicken | Health and Happy Hour


Pineapple, 1 cup chopped
1/2 Avocado, chopped
Red Onion, 1/2 cup chopped
Juice from 1/2 Lemon and 1/2 Lime
Chicken Breast, 1 lb
Coconut Oil
Italian Seasoning, 1 tsp or (1/2 tsp each of Thyme, Oregano, Rosemary)

Optional Ingredients: Brown Rice or Quinoa


Cook the chicken in a skillet on the stove in coconut oil and Italian seasoning for 8-10 minutes or until done or the oven for 400 degrees for 15 minutes or until done.

Note: When buying coconut oil, make sure you buy organic, extra virgin, unrefined coconut oil like this one from Amazon.  “Refined” coconut oil has been processed and stripped of many of its natural health properties.  This post will tell you about the amazing health benefits of coconut oil.

While the chicken is cooking, chop up the rest of the ingredients for the salsa and combine in a bowl. Squeeze the lemon and lime juice over the mixture and stir well to coat.


Serve the salsa over the chicken with brown rice, quinoa, or vegetables, if desired.
