Pomegranate Walnut Salad with Balsamic Vinaigrette

Pecan Pomegranate Salad

Between the healthy fats in the walnuts and the antioxidants in the pomegranate seeds, this light salad packs a powerful punch!

If you’re looking for something a little more dense, you can always add grilled chicken or hardboiled eggs on top.


Pecan Pomegranate Salad with Balsamic Vinaigrette Dressing | Health and Happy Hour

Spinach, 2-3 cups
Pomegranate Seeds, 1/2 cup
Walnuts, 1/2 cup

Balsamic Vinaigrette Dressing:
Olive Oil, 1/2 cup
Balsamic Vinegar, 3 tbsp
Garlic, 1 clove, chopped (or 1/2 tsp Garlic Powder)
Dijon Mustard, 1 tbsp
Honey, 1 tsp
Italian Seasoning (or 1/2 tsp each of Rosemary, Thyme, and Oregano)
1/2 tsp salt
1/8 tsp pepper

Optional: Grilled Chicken


To make the dressing, whisk all of the ingredients in a small bowl. Add 1 tbsp to prepared salad.

Note: If you often take salads with you to lunch, these salad kits from Amazon are great when you want to keep toppings and dressings separate from the lettuce.  If you don’t bring salads to lunch often, it’s a great reason to start 🙂
